Ingredients

  • 1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed
  • ½ cup pumpkin seeds (pepitas, a great zinc source)
  • 1 small cucumber, diced
  • 1 red bell pepper, diced
  • 1 small red onion or 3 scallions, finely chopped
  • 1 medium avocado, diced
  • ¼ cup parsley or cilantro, chopped
  • 2 tablespoons hemp seeds (optional, extra zinc boost)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice (or more to taste)
  • 1 teaspoon apple cider vinegar (optional for more tang)
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • Salt and pepper, to taste


Instructions

  1. Toast the pumpkin seeds:
  2.  In a dry skillet over medium heat, toast the pumpkin seeds for 3–4 minutes, stirring occasionally until lightly golden and fragrant. Let them cool.
  3. Prepare the salad:
  4.  In a large bowl, combine the chickpeas, cucumber, bell pepper, onion (or scallions), avocado, parsley/cilantro, and hemp seeds.
  5. Make the dressing:
  6.  In a small bowl, whisk together olive oil, lemon juice, apple cider vinegar, cumin, paprika, salt, and pepper.
  7. Assemble:
  8.  Pour the dressing over the salad. Toss gently to combine.
  9. Top with toasted pumpkin seeds right before serving to keep them crunchy.
