Fan ovens circulate hot air, so they cook faster at the same dial setting. Drop a conventional temperature by 20 °C when using fan.

Why a cup is not one size

A US customary cup is 236.6 ml, a metric cup is 250 ml, and an old UK imperial cup is 284.1 ml — a 20% spread. American recipes almost always mean the US cup. Australian recipes mean the metric one, and an Australian tablespoon is 20 ml rather than 15 ml, which matters for anything strongly flavoured.

°C = (°F − 32) × 5/9 and °F = °C × 9/5 + 32.
