Kanji Recipe (Probiotic Drink)
Kanji is a traditional Indian fermented drink made from black carrots or beetroot, rich in probiotics and perfect for improving digestion. Tangy, spicy, and full of natural goodness, itโs a healthy drink for boosting immunity and gut health.
Cooking Method
- Wash and peel the carrots or beetroot, then cut them into thin sticks or rounds.
- Boil water with salt, turmeric, and jaggery (if using). Let it cool completely.
- Crush mustard seeds coarsely and mix with red chili powder.
- Place the prepared vegetables in a glass jar and pour the cooled spiced water over them.
- Cover the jar with a cloth and leave it at room temperature to ferment for 2โ3 days.
- Stir once daily and check for tanginess. Once fermented, refrigerate.
- Serve chilled as a healthy probiotic drink.
