Kadhi Pakora
Kadhi Pakora is a classic North Indian comfort dish featuring crispy gram flour (besan) fritters cooked in a tangy, spiced yogurt-based curry. Rich, flavorful, and hearty, it’s best enjoyed with steamed rice or roti, making it a perfect meal for lunch or dinner.
Cooking Method
- Prepare Pakoras: In a bowl, mix gram flour (besan), chopped onions, green chilies, coriander leaves, a pinch of salt, and water to make a thick batter. Shape into small balls and deep-fry until golden brown. Set aside.
- Prepare Kadhi Base: In another bowl, whisk yogurt with gram flour, turmeric, red chili powder, and salt to make a smooth mixture.
- Cook Kadhi: Heat oil in a pan. Add cumin seeds and asafoetida (hing). Pour in the yogurt-besan mixture, stirring continuously to avoid lumps.
- Simmer: Bring the mixture to a gentle boil and simmer for 10-15 minutes until the kadhi thickens slightly.
- Add Pakoras: Gently add the fried pakoras into the kadhi. Simmer for another 5-7 minutes to allow the flavors to blend.
- Tempering (Optional): Prepare a tempering of ghee, mustard seeds, curry leaves, and dry red chilies. Pour over the kadhi for extra flavor.
- Serve: Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
