Cooking Method
- Preheat Oven: Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper.
- Prepare Chicken: Season chicken breasts or thighs with taco seasoning, salt, pepper, and a drizzle of olive oil. Slice into thin strips.
- Arrange on Sheet Pan: Place the chicken strips on the sheet pan. Add corn, bell peppers, or other preferred vegetables around the chicken.
- Bake Chicken & Veggies: Roast for 15-20 minutes until chicken is cooked through and vegetables are tender.
- Prepare Tostadas: Lightly toast corn or flour tortillas on another sheet pan or in a skillet until crisp.
