Rava Dhokla (Savory Semolina Cakes)
Rava Dhokla is a light and fluffy savory snack from India, made with semolina (rava) and yogurt. Soft, spongy, and mildly tangy, these steamed cakes are perfect for breakfast, tea-time, or as an appetizer. Tempered with mustard seeds, curry leaves, and green chilies, Rava Dhokla offers a burst of flavor in every bite and pairs wonderfully with green chutney or sweet tamarind chutney.
Cooking Method
- In a mixing bowl, combine 1 cup semolina (rava), ½ cup yogurt, ½ tsp baking soda, ½ tsp ENO fruit salt, 1–2 tbsp water, and salt to taste. Mix into a smooth batter.
- Let the batter rest for 10–15 minutes.
- Grease a steaming tray or plate and pour in the batter evenly.
- Steam the batter in a steamer or pressure cooker (without whistle) for 12–15 minutes, or until a toothpick comes out clean.
- In a small pan, heat 1 tbsp oil, add ½ tsp mustard seeds, 1 tsp sesame seeds, 1–2 chopped green chilies, and a few curry leaves. Pour this tempering over the steamed dhokla.
- Let it cool slightly and cut into squares or diamonds.
- Serve warm with green chutney or sweet tamarind chutney.
