Cooking Method
- Preheat Oven: Preheat the oven to 425°F (220°C) and line a sheet pan with parchment paper.
- Prepare Pork: Season pork tenderloin with salt, pepper, garlic powder, paprika, and dried herbs.
- Prepare Vegetables: Chop vegetables like carrots, potatoes, and green beans into even pieces. Toss with olive oil, salt, pepper, and herbs.
- Arrange on Sheet Pan: Place pork in the center of the pan and arrange vegetables around it. Drizzle a little extra olive oil over everything.
- Roast: Bake for 25-30 minutes, turning vegetables halfway through, until pork reaches an internal temperature of 145°F (63°C) and vegetables are tender.
- Rest Meat: Let the pork rest for 5-10 minutes before slicing to retain juices.
- Serve: Slice pork tenderloin and serve with roasted vegetables, garnished with fresh herbs like parsley or thyme.
