Pikelets
Pikelets are soft, fluffy mini pancakes popular as a classic tea-time treat. Cooking Method
- In a mixing bowl, whisk together flour, sugar, baking powder, and a pinch of salt.
- In another bowl, combine milk, egg, and melted butter until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing gently to form a smooth batter.
- Heat a nonstick pan or griddle over medium heat and lightly grease with butter.
- Drop small spoonfuls of batter onto the pan to form mini rounds.
- Cook for about 1โ2 minutes until bubbles appear on the surface, then flip and cook the other side until golden brown.
- Transfer to a plate and repeat with the remaining batter.
- Serve warm with your favorite toppings.
