Prepare Filling: In a bowl, mix ground pork sausage meat with finely chopped onion, minced garlic, salt, black pepper, and optional herbs like thyme or sage. Combine well.
Prepare Pastry: Roll out chilled puff pastry on a lightly floured surface and cut into long rectangles.
Shape Filling: Form the pork mixture into a long log shape and place it along one edge of the pastry.
Roll and Seal: Roll the pastry over the filling and seal the edge using a little water. Press gently to secure.
Cut Portions: Slice into 2–3 inch pieces and place on a parchment-lined baking tray.
Egg Wash: Brush with beaten egg for a golden, glossy finish. Score lightly on top for decoration.
Bake: Bake in a preheated oven at 200°C (390°F) for 20–25 minutes until puffed and golden brown. Serve warm.
