Indian Green Beans Sabzi (Beans ki Sabzi)
Indian Green Beans Sabzi is a simple, homestyle North Indian vegetable dish made with fresh green beans, aromatic spices, and minimal ingredients. Lightly sautéed and cooked with turmeric, cumin, and coriander, this dry sabzi pairs perfectly with roti, paratha, or dal-rice. It’s a healthy, vegan, and gluten-free dish that is commonly prepared in everyday Indian kitchens.
Cooking Method
- Prepare the beans: Wash the green beans, trim the ends, and chop them into small pieces.
- Heat the oil: Heat oil in a pan on medium flame.
- Add cumin: Add cumin seeds and let them splutter.
- Sauté onion: Add chopped onion and cook until light golden.
- Add spices: Mix in turmeric powder, coriander powder, and salt. Stir well.
- Cook beans: Add chopped green beans and mix properly with the spices. Cover and cook on low flame for 8–10 minutes, stirring occasionally. Sprinkle a little water if needed.
- Finish & serve: Once the beans are tender, turn off the heat. Serve hot with roti, chapati, or dal-rice.
