Preheat oven: Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
Prepare filling: Heat olive oil in a pan over medium heat. Sauté onion and garlic until soft. Add cooked lentils, smoked paprika, chili powder, and salt. Cook for 3–4 minutes until well combined. Allow to cool slightly.
Roll pastry: Roll out the puff pastry sheet. Spoon the lentil filling along one edge, forming a log. Roll the pastry over to encase the filling. Seal the edges by pressing gently.
Cut rolls: Slice the rolled log into 2–3 inch pieces and place them on the baking tray.
Bake: Bake in the preheated oven for 20–25 minutes until golden brown and crispy.
Cool slightly: Remove from oven and let cool for 5 minutes.
Serve: Serve warm with your favorite dipping sauce or chutney.
