Sabudana Vada is a crispy and golden Indian snack made from soaked tapioca pearls (sabudana), potatoes, peanuts, and aromatic spices. Traditionally enjoyed during fasting (vrat) days, these vadas are crunchy on the outside, soft on the inside, and bursting with flavor. Serve them with green chutney or sweet yogurt for the perfect snack or breakfast treat.
Soak Sabudana: Rinse and soak sabudana in water for 4–5 hours or overnight until soft. Drain excess water.
Prepare Mixture: Mash boiled potatoes and mix with soaked sabudana, roasted peanuts (coarsely ground), green chilies, cumin seeds, coriander leaves, and salt.
Shape Vadas: Divide the mixture into small portions and shape them into round patties.
Fry: Heat oil in a pan on medium heat. Fry vadas until golden brown and crispy on both sides.
Serve: Drain on paper towels and serve hot with green chutney or sweet yogurt.
