Cooking Method

- Add the diced bell peppers and grated carrots. Cook for 5–7 minutes until the vegetables begin to soften but still retain a slight bite.
- Sprinkle in the curry powder, paprika, and ground cumin. Stir well and cook for 1 minute to toast the spices.
- Add the tomato paste and diced tomatoes, stirring until well combined. Simmer for 10 minutes, allowing the sauce to thicken.
- Fold in the baked beans and season with salt and black pepper. Simmer for another 5–8 minutes until heated through.
- Taste and adjust the seasoning or spice level if needed.
- Garnish with chopped parsley or cilantro.
- Serve warm or cold with pap, grilled meats, boerewors, or fresh bread.
