Press tofu to remove excess moisture, then cut into cubes.
Toss tofu with oil, soy sauce, and spices.
Spread on a baking tray and bake for 25–30 minutes until golden and crispy.
Meanwhile, cook quinoa according to package instructions.
Fluff quinoa with a fork and season lightly.
Serve crispy tofu over quinoa.
Garnish with fresh herbs or a drizzle of sauce if desired.
