 Rejuvelac is a traditional fermented beverage made from sprouted grains such as wheat, rye, quinoa, or barley. Popular among natural health enthusiasts, this lightly tangy, probiotic-rich drink is created by fermenting sprouted grains in water. Rejuvelac contains beneficial enzymes, vitamins, and probiotics that may support digestion and gut health. Its refreshing, lemony flavor makes it a versatile ingredient for drinking on its own or using in plant-based recipes. 

Cooking Method

 

Step 1: Soak the Grains

 

  •  Rinse the grains thoroughly. 
  •  Soak them in water overnight (8–12 hours). 


Step 2: Sprout the Grains

 

  •  Drain and rinse the grains. 
  •  Place them in a sprouting jar or container. 
  •  Rinse twice daily for 2–3 days until small sprouts appear. 


Step 3: Ferment

 

  •  Transfer the sprouted grains to a clean glass jar. 
  •  Add 4 cups of filtered water. 
  •  Cover with a breathable cloth. 


Step 4: Allow Fermentation

 

  •  Leave the jar at room temperature for 24–48 hours. 
  •  The liquid will become slightly cloudy and develop a tangy aroma. 


Step 5: Strain

 

  •  Strain the liquid into a clean bottle. 
  •  Reserve the sprouted grains for a second batch if desired. 


Step 6: Flavor (Optional)

 

  •  Add lemon juice, sea salt, or honey according to taste. 


Step 7: Chill and Serve

 

  •  Refrigerate for several hours. 
  •  Serve cold, garnished with fresh mint and ice cubes.
