Rejuvelac
Rejuvelac is a traditional fermented beverage made from sprouted grains such as wheat, rye, quinoa, or barley. Popular among natural health enthusiasts, this lightly tangy, probiotic-rich drink is created by fermenting sprouted grains in water. Rejuvelac contains beneficial enzymes, vitamins, and probiotics that may support digestion and gut health. Cooking Method
Step 1: Soak the Grains
- Rinse the grains thoroughly.
- Soak them in water overnight (8–12 hours).
Step 2: Sprout the Grains
- Drain and rinse the grains.
- Place them in a sprouting jar or container.
- Rinse twice daily for 2–3 days until small sprouts appear.
Step 3: Ferment
- Transfer the sprouted grains to a clean glass jar.
- Add 4 cups of filtered water.
- Cover with a breathable cloth.
Step 4: Allow Fermentation
- Leave the jar at room temperature for 24–48 hours.
- The liquid will become slightly cloudy and develop a tangy aroma.
Step 5: Strain
- Strain the liquid into a clean bottle.
- Reserve the sprouted grains for a second batch if desired.
Step 6: Flavor (Optional)
- Add lemon juice, sea salt, or honey according to taste.
Step 7: Chill and Serve
- Refrigerate for several hours.
- Serve cold, garnished with fresh mint and ice cubes.
