Cooking Method

 

  1. Heat a large pot and add water.
  2. Add pork ribs or pork belly and bring to a boil.
  3. Skim off any foam that appears on the surface.
  4. Add sliced onion and tomatoes to the pot.
  5. Let the meat simmer for about 25–30 minutes until tender.
  6. Add radish and eggplant and cook for another 5 minutes.
  7. Stir in tamarind paste to create the sour flavor of the soup.
  8. Add green beans and cook for a few minutes.
  9. Add fish sauce and salt to adjust the seasoning.
  10. Add spinach or water spinach at the end and cook briefly.
  11. Add green chilies for a mild spicy flavor.
  12. Serve hot with steamed rice.
