Cooking Method


  1.  In a small bowl, combine the warm water, honey, and yeast. Let it sit for 5–10 minutes until foamy. 
  2.  In a large mixing bowl, whisk together the whole wheat flour, salt, and vital wheat gluten if using. 
  3.  Add the yeast mixture and olive oil to the dry ingredients. 
  4.  Mix until a rough dough forms. 
  5.  Knead the dough on a lightly floured surface for 8–10 minutes until smooth and elastic. 
  6.  Place the dough in a lightly greased bowl and turn it once to coat with oil. 
  7.  Cover and let it rise in a warm place for 1–1½ hours, or until doubled in size. 
  8.  Punch down the dough and shape it into a loaf, rolls, or another desired form. 
  9.  Place the shaped dough into a greased baking pan or on a baking tray. 
  10.  Cover and allow it to rise for another 30–45 minutes. 
  11.  Bake in a preheated oven at 375°F (190°C) for 30–35 minutes, or until the loaf is golden brown and sounds hollow when tapped. 
  12.  Remove from the oven and cool on a wire rack before slicing or serving.
