Cooking Method
In a small bowl, combine the warm water, honey, and yeast. Let it sit for 5–10 minutes until foamy.
In a large mixing bowl, whisk together the whole wheat flour, salt, and vital wheat gluten if using.
Add the yeast mixture and olive oil to the dry ingredients.
Mix until a rough dough forms.
Knead the dough on a lightly floured surface for 8–10 minutes until smooth and elastic.
Place the dough in a lightly greased bowl and turn it once to coat with oil.
Cover and let it rise in a warm place for 1–1½ hours, or until doubled in size.
Punch down the dough and shape it into a loaf, rolls, or another desired form.
