Cooking Method


  1.  Place strawberries in a large saucepan. 
  2.  Add sugar and lemon juice. 
  3.  Stir well and let sit for 10 minutes. 
  4.  Cook over medium heat, stirring frequently. 
  5.  Bring the mixture to a gentle boil. 
  6.  Continue cooking until the jam thickens. 
  7.  Skim off any foam if necessary. 
  8.  Test the consistency on a chilled plate. 
  9.  Remove from heat and allow to cool slightly. 
  10.  Transfer to sterilized jars and seal.
