Cooking Method
Pat the fish fillets dry with paper towels. Rub them with the lemon juice, minced garlic, salt, and black pepper. Let the fish marinate for 15–20 minutes.
In a large bowl, whisk together the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, oregano, and baking powder.
Heat the vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
Dredge each fish fillet thoroughly in the seasoned flour mixture, pressing gently so the coating adheres well. Shake off any excess flour.
Carefully lower the fish into the hot oil without overcrowding the pan.
Fry for 4–6 minutes per side, depending on the thickness of the fillets, until golden brown, crispy, and cooked through. The internal temperature should reach 145°F (63°C).
Remove the fish with a slotted spoon and transfer to a wire rack or paper towel-lined plate to drain excess oil.
Allow the fish to rest for 2–3 minutes to maintain its crispiness.
