Heat oil in a pan over medium heat.
Add chopped onions and sauté until golden.
Stir in garlic and ginger; cook for 1 minute.
Add chopped tomatoes and cook until soft.
Mix in spices (turmeric, cumin, coriander, garam masala).
Add lentils and mixed vegetables; stir well.
Pour in water or vegetable broth and bring to a boil.
Simmer for 20–25 minutes until lentils are tender. Garnish with fresh coriander and serve hot.
