Prepare Dough: Mix all-purpose flour with salt and a little oil. Add water gradually and knead into a stiff dough. Let it rest for 20–30 minutes.
Prepare Filling: Heat oil in a pan, add garlic paste and sauté until fragrant. Add mashed boiled potatoes, salt, and spices. Mix well and cook for 3–4 minutes. Let it cool.
Shape Samosas: Divide dough into small balls, roll into oval shapes, cut in half, form cones, and fill with garlic potato mixture. Seal edges with water.
Frying: Heat oil on medium flame and deep fry until golden brown and crispy.
Serve: Serve hot with spicy chutney or garlic dip.
