  1.  Heat the olive oil in a large soup pot over medium heat. 
  2.  Add the onion, carrots, and celery, then cook for 5–6 minutes until softened. 
  3.  Stir in the garlic and cook for 1 minute until fragrant. 
  4.  Add the turkey or chicken broth, bay leaf, thyme, parsley, salt, and black pepper. Bring to a boil. 
  5.  Reduce the heat and simmer for 10 minutes to allow the flavors to develop. 
  6.  Stir in the cooked turkey and egg noodles. 
  7.  Simmer for 8–10 minutes, or until the noodles are tender. 
  8.  Remove the bay leaf and adjust the seasoning to taste. 
  9.  Garnish with fresh parsley before serving. 
  10.  Serve hot with crusty bread or crackers.
