Cooking Method
Preheat the oven to 350°F (175°C). Grease an 8-inch (20 cm) square baking dish.

In a separate large bowl, beat the butter and sugar until light and creamy. Add the egg and beat well. Mix in the apricot jam and vanilla extract.
Stir in the vinegar, then alternately add the dry ingredients and milk, mixing until the batter is smooth.
Pour the batter into the prepared baking dish and spread evenly.
Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
While the pudding bakes, combine the heavy cream, milk, butter, sugar, and vanilla in a saucepan. Heat gently over medium heat until the butter melts and the sugar dissolves. Do not boil.
Remove the baked pudding from the oven and immediately poke holes all over the surface using a skewer or fork. Slowly pour the warm cream sauce evenly over the hot pudding, allowing it to soak in completely.
