Berkoukes is a hearty and comforting traditional dish from Algeria, made with large handmade couscous pearls simmered in a rich tomato-based broth with vegetables and meat. Popular throughout Algeria, especially during colder months, Berkoukes is cherished for its warming flavors, nourishing ingredients, and satisfying texture. 

Unlike regular couscous, Berkoukes uses larger pasta-like grains that absorb the flavors of the stew while maintaining a pleasantly chewy texture. The dish is typically prepared with lamb, beef, or chicken, along with vegetables such as carrots, zucchini, turnips, and chickpeas. Aromatic spices like paprika, cumin, and cinnamon add depth and warmth to the broth. 

Often served during family gatherings and special occasions, Berkoukes is a beloved comfort food that showcases the rich culinary traditions of Algeria. 

Cooking Method


  1.  Heat olive oil in a large pot over medium heat. 
  2.  Add the onion and sauté until softened. 
  3.  Add the meat and cook until lightly browned. 
  4.  Stir in the tomatoes and tomato paste. 
  5.  Add paprika, cumin, cinnamon, salt, and black pepper. 
  6.  Pour in the water or stock and bring to a boil. 
  7.  Add the chickpeas, carrots, zucchini, and turnip. 
  8.  Reduce heat and simmer for 45 minutes until the meat is tender. 
  9.  Stir in the Berkoukes and cook for 15–20 minutes until tender. 
  10.  Garnish with fresh cilantro or parsley and serve hot.
