Heat the olive oil in a saucepan over medium heat.
Add the sliced onions and cook for 15–20 minutes, stirring occasionally, until deeply caramelized.
Stir in the minced garlic and thyme, cooking for 1 minute until fragrant.
Sprinkle the flour over the onions and stir for 1–2 minutes.
Gradually whisk in the broth until smooth.
Season with salt and black pepper, then simmer for 5–7 minutes until the gravy thickens.
Serve hot over mashed potatoes, sausages, roast beef, pork chops, meatloaf, or roasted vegetables.
