Cooking Method


  1.  Heat olive oil in a pot or tagine over medium heat. 
  2.  Add chopped onion and cook until soft. 
  3.  Add garlic and sauté until fragrant. 
  4.  Add meat and cook until lightly browned. 
  5.  Add tomatoes, spices, salt, and pepper. 
  6.  Pour in water or broth and mix well. 
  7.  Cover and cook on low heat for 45–60 minutes until meat is tender. 
  8.  Add dried fruits if using and cook for a few more minutes. 
  9.  Adjust seasoning and serve hot.
