Cooking Method


  1.  Mix cooked rice with rice vinegar and sugar. Let it cool. 
  2.  In a bowl, whisk eggs with sugar, soy sauce, and mirin. 
  3.  Heat a lightly oiled pan over low heat. 
  4.  Pour a thin layer of egg mixture and cook gently. 
  5.  Roll the cooked egg and push it to one side of the pan. 
  6.  Add more egg mixture and repeat to form a rolled omelet. 
  7.  Remove and slice the tamago into pieces. 
  8.  Shape sushi rice into small blocks and place tamago on top. 
  9.  Secure with a strip of nori if desired. 
  10.  Serve fresh.
