Cooking Method
Rinse the dried matemba under cold water to remove excess salt and impurities.
Pat the fish dry with paper towels.
Heat the vegetable oil in a large frying pan over medium heat.
Fry the matemba for 5–7 minutes, stirring occasionally, until crispy and lightly browned.
Remove the fish and set aside.
In the same pan, sauté the onion until soft.
Add the garlic and cook for about 30 seconds.
Stir in the chopped tomato and cook until it softens.
Season with black pepper and paprika if using.
Return the fried matemba to the pan and toss everything together for 2–3 minutes.
Garnish with fresh parsley or coriander if desired and serve hot.
