Cooking Method
Peel, remove the seeds, and cut the papaya into small cubes.
Place the papaya, sugar, water, lemon juice, and cinnamon stick in a large saucepan.

Reduce the heat to low and simmer, stirring occasionally.
Cook for 45–60 minutes until the papaya is very soft and the mixture thickens.
Lightly mash the fruit with a spoon or potato masher for a smoother texture, if desired.
Stir in the vanilla extract during the final few minutes of cooking, if using.
Remove the cinnamon stick.
