Cabo Verdean Doce de Papaia is a traditional Cape Verdean dessert made by slowly cooking ripe papaya with sugar and aromatic spices until it becomes a rich, glossy preserve. This homemade delicacy is enjoyed as a dessert, breakfast spread, or accompaniment to bread, crackers, and cheese. 

The natural sweetness of ripe papaya blends beautifully with sugar, lemon juice, and a touch of cinnamon, creating a balanced flavor with a subtle citrus finish. Slow cooking softens the fruit while concentrating its tropical taste. 

As the mixture simmers, it thickens into a smooth, jam-like consistency with a vibrant golden-orange color. The result is a fragrant preserve that highlights the fresh flavor of papaya. 

Simple to prepare with just a few ingredients, this classic Cape Verdean recipe is perfect for preserving seasonal fruit and sharing with family and friends. 

Cooking Method


  1.  Peel, remove the seeds, and cut the papaya into small cubes. 
  2.  Place the papaya, sugar, water, lemon juice, and cinnamon stick in a large saucepan. 
  3.  Stir well and bring the mixture to a gentle boil over medium heat. 
  4.  Reduce the heat to low and simmer, stirring occasionally. 
  5.  Cook for 45–60 minutes until the papaya is very soft and the mixture thickens. 
  6.  Lightly mash the fruit with a spoon or potato masher for a smoother texture, if desired. 
  7.  Stir in the vanilla extract during the final few minutes of cooking, if using. 
  8.  Remove the cinnamon stick. 
  9.  Allow the preserve to cool slightly before transferring it to sterilized glass jars. 
  10.  Cool completely before sealing and refrigerating.
