  1. Season the shrimp lightly with salt and black pepper.
  2. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the shrimp and cook for 1–2 minutes per side until pink. Remove and set aside.
  3. Add the remaining vegetable oil to the pan. Pour in the beaten eggs and gently scramble until just cooked. Transfer to a plate.
  4. Add the onion and carrots to the skillet and stir-fry for 3–4 minutes until slightly softened.
  5. Stir in the garlic and cook for 30 seconds until fragrant.
  6. Add the cold cooked rice, breaking up any clumps with a spatula. Stir-fry for 3–4 minutes.
  7. Mix in the peas, soy sauce, oyster sauce, and sesame oil. Stir until everything is evenly coated and heated through.
  8. Return the cooked shrimp and scrambled eggs to the skillet and toss gently to combine.
  9. Stir in the sliced green onions and cook for another minute. Taste and adjust the seasoning if needed.
  10. Serve immediately while hot.
