Cooking Method


  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
  2. Pat the salmon fillets dry with paper towels and place them skin-side down in the prepared baking dish.
  3. Drizzle the salmon with olive oil and season lightly with salt and black pepper.
  4. Spread a generous layer of basil pesto evenly over the top of each salmon fillet.
  5. Sprinkle with grated Parmesan cheese if using. Arrange the cherry tomatoes around the salmon for added flavor and color.
  6. Bake for 12–15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  7. Remove the salmon from the oven and drizzle with fresh lemon juice.
  8. Garnish with fresh basil leaves and serve with lemon wedges.
  9. Pair with roasted vegetables, rice, mashed potatoes, or pasta for a complete meal.
