Tuo Zaafi, often called TZ, is a traditional staple food from northern Ghana. Made from maize flour or a combination of maize and millet flour, this soft and smooth dish is a beloved part of Ghanaian cuisine. Tuo Zaafi is commonly served with flavorful soups such as ayoyo soup, okra soup, or groundnut soup, making it a hearty and satisfying meal. 

Known for its smooth texture and mild flavor, Tuo Zaafi is prepared by gradually stirring flour into boiling water until a thick, stretchy consistency forms. The dish is highly versatile and serves as the perfect accompaniment to rich, savory soups. It is especially popular in northern Ghana and is enjoyed during both everyday meals and special gatherings. 

Nutritious, filling, and deeply rooted in Ghanaian culture, Tuo Zaafi remains one of the most iconic traditional foods of northern Ghana. 

Cooking Method


  1.  Bring 4 cups of water to a boil in a large pot. 
  2.  Mix the remaining 1 cup of water with a small amount of flour to create a smooth slurry. 
  3.  Pour the slurry into the boiling water and stir continuously. 
  4.  Gradually add the remaining flour while stirring vigorously. 
  5.  Continue stirring to prevent lumps from forming. 
  6.  Cook over medium heat until the mixture becomes thick and smooth. 
  7.  Add more hot water if necessary to adjust the consistency. 
  8.  Stir until the Tuo Zaafi becomes stretchy and fully cooked. 
  9.  Shape into serving portions using a bowl or spoon. 
  10.  Serve hot with ayoyo soup, okra soup, or groundnut soup.
