Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line with parchment paper.
In a large bowl, whisk together flour, baking soda, cinnamon, and a pinch of salt (and optional nutmeg/cloves).
In another bowl, beat together pumpkin puree, sugar, eggs, and vegetable oil until smooth.
Gradually fold the dry ingredients into the wet mixture until just combined.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack before slicing.
Optional: top with a light dusting of powdered sugar or cream cheese glaze.
