Sadza is the national dish of Zimbabwe and a daily staple enjoyed across the country. Made with finely ground white maize meal and water, Sadza has a smooth, firm texture that makes it the perfect accompaniment to hearty stews, grilled meats, vegetables, and leafy greens. 

Zimbabwean Sadza is simple to prepare yet incredibly satisfying. It is traditionally eaten by hand, using small portions to scoop up flavorful side dishes such as beef stew, chicken, fish, or sautéed vegetables. Its mild flavor allows it to pair well with a wide variety of savory meals, making it an essential part of Zimbabwean cuisine. 

Cooking Method


  1.  Bring 3 cups of water to a boil in a large saucepan. 
  2.  Add the salt if using. 
  3.  Gradually stir in ½ cup of the maize meal while whisking continuously to prevent lumps. 
  4.  Simmer for 5 minutes until it forms a smooth porridge. 
  5.  Slowly add the remaining maize meal while stirring constantly. 
  6.  Continue stirring until the mixture becomes thick and smooth. 
  7.  Reduce the heat to low and cover the saucepan. 
  8.  Cook for 10–15 minutes, stirring occasionally to prevent sticking. 
  9.  Once the Sadza is firm and fully cooked, remove it from the heat. 
  10.  Shape into serving portions using a wooden spoon or bowl. 
  11.  Serve hot with your favorite stew, grilled meat, fish, or vegetables.
