Cooking Method


  1.  Heat the olive oil in a large soup pot over medium heat. 
  2.  Add the onion and cook for 4–5 minutes until softened. 
  3.  Stir in the garlic and cook for 1 minute until fragrant. 
  4.  Add the diced chicken and cook until lightly browned on all sides. 
  5.  Stir in the cumin, chili powder, oregano, salt, and black pepper. Cook for 1 minute. 
  6.  Pour in the chicken broth, then add the white beans, green chilies, and corn. Bring to a gentle boil. 
  7.  Reduce the heat and simmer for 20 minutes, or until the chicken is fully cooked. 
  8.  Stir in the cream cheese until completely melted and smooth. 
  9.  Add the milk and simmer gently for 5 minutes without boiling. 
  10.  Stir in the lime juice and adjust the seasoning to taste. 
  11.  Garnish with fresh cilantro and serve hot with your favorite toppings.
