Zambian Tute ne Mbalala Recipe | Traditional Pumpkin Leaves and Groundnut Dish

Tute ne Mbalala is a nutritious and flavorful vegetable dish widely enjoyed in Zambia. The name refers to tender pumpkin leaves (Tute) cooked with groundnuts (Mbalala), creating a rich, creamy, and satisfying side dish that is a staple in many Zambian homes.

This traditional recipe highlights the importance of leafy greens and peanuts in Zambian cuisine. The groundnuts add a nutty flavor and creamy texture, while the pumpkin leaves provide vitamins, minerals, and fiber. Tute ne Mbalala is commonly served alongside Nshima, making it a wholesome and balanced meal.

Simple, healthy, and deeply rooted in local food traditions, this dish is a favorite across Zambia.

Cooking Method

  1.  Wash the pumpkin leaves thoroughly and chop them into small pieces.
  2.  Heat the vegetable oil in a cooking pot over medium heat.
  3.  Add the chopped onion and sauté until soft.
  4.  Stir in the chopped tomatoes and cook for 3–5 minutes.
  5.  Add the pumpkin leaves and mix well.
  6.  Pour in the water and bring to a gentle simmer.
  7.  Cook for about 10–15 minutes until the leaves become tender.
  8.  Gradually add the ground peanut powder while stirring continuously.
  9.  Mix well to avoid lumps.
  10.  Season with salt and black pepper if desired.
