Cooking Method


  1.  Heat oil in a large pot over medium heat. 
  2.  Add venison pieces and brown them on all sides. 
  3.  Remove the meat and set aside. 
  4.  In the same pot, sauté chopped onion and garlic until fragrant. 
  5.  Add carrots, potatoes, and celery, then cook for a few minutes. 
  6.  Return the venison to the pot. 
  7.  Add broth, tomato paste, thyme, bay leaf, salt, and black pepper. 
  8.  Stir well and bring to a boil. 
  9.  Reduce heat, cover, and simmer for 1.5 to 2 hours until the meat is tender. 
  10.  Remove bay leaf, adjust seasoning, and serve hot.
