Moroccan Chicken Tagine is a fragrant and flavorful North African dish made with tender chicken, aromatic spices, vegetables, and preserved lemons or olives. Named after the traditional cooking vessel called a tagine, this iconic dish is a cornerstone of Morocco cuisine and is celebrated for its rich flavors and slow-cooked tenderness. 

The chicken is simmered with onions, garlic, ginger, and a blend of warm spices such as turmeric, cumin, cinnamon, and paprika. As the ingredients cook slowly, they create a rich, aromatic sauce that infuses the chicken with deep flavor. Olives and preserved lemons add a distinctive tangy and savory character that is uniquely Moroccan. 

Moroccan Chicken Tagine is traditionally served with couscous, bread, or rice, making it a hearty and satisfying meal for family dinners and special occasions. 

Cooking Method


  1.  Heat olive oil in a tagine or large pot over medium heat. 
  2.  Add onions and cook until softened. 
  3.  Stir in garlic, ginger, turmeric, cumin, paprika, and cinnamon. 
  4.  Add the chicken and brown lightly on all sides. 
  5.  Pour in the chicken broth and stir well. 
  6.  Add preserved lemon slices and olives. 
  7.  Cover and simmer over low heat for 45–60 minutes. 
  8.  Cook until the chicken is tender and the sauce has thickened. 
  9.  Adjust seasoning with salt and pepper. 
  10.  Garnish with fresh parsley or cilantro and serve hot.
