Cooking Method


  1.  In a bowl, combine chicken, soy sauce, and half the garlic. Marinate for at least 30 minutes. 
  2.  Heat oil in a pot and sauté remaining garlic until fragrant. 
  3.  Add the marinated chicken and cook until lightly browned. 
  4.  Pour in the marinade, vinegar, water, bay leaves, and pepper. 
  5.  Bring to a boil, then reduce heat and simmer for 25–35 minutes until chicken is tender. 
  6.  Optional: Let it simmer longer to reduce sauce for a thicker glaze. 
  7.  Add sugar if desired to balance tanginess. 
  8.  Taste and adjust seasoning. 
  9.  Serve hot.
