Cooking Method
Step 1: Prepare the Base
- In a large jar or bowl, combine the filtered water, grated ginger, sugar, and lemon juice.
- Stir until the sugar dissolves completely.
Step 2: Add the Ginger Bug
- Add the active ginger bug starter and mix well.
Step 3: Primary Fermentation
- Cover the container with a clean cloth.
- Leave at room temperature for 24–48 hours.
Step 4: Strain the Liquid
- Strain out the ginger pieces using a fine-mesh sieve.
Step 5: Bottle the Soda
- Pour the liquid into airtight bottles.
- Add fruit slices or vanilla extract if desired.
Step 6: Secondary Fermentation
- Leave the bottles at room temperature for 1–3 days to build carbonation.
- Open carefully each day to release excess pressure if needed.
Step 7: Refrigerate and Serve
- Once sufficiently fizzy, refrigerate the bottles.
- Serve chilled and enjoy.
