Cooking Method
In a small bowl, combine the warm water, brown sugar, and yeast. Let it sit for 5–10 minutes until foamy.
In a large mixing bowl, combine the bread flour and salt.

Mix until a dough forms, then knead for 8–10 minutes until smooth and elastic.
Place the dough in a lightly greased bowl, cover, and let it rise for about 1 hour or until doubled in size.
Punch down the dough and divide it into 8 equal portions.
Roll each portion into a long rope and shape into a pretzel twist.
Bring the water and baking soda to a gentle boil in a large pot.
Dip each pretzel into the baking soda bath for 20–30 seconds, then remove with a slotted spoon.
Arrange the pretzels on a parchment-lined baking tray.
Brush with the beaten egg and sprinkle with coarse salt.
Bake in a preheated oven at 220°C (425°F) for 12–15 minutes, or until deep golden brown.
