Cooking Method


  1.  Bring the water to a boil, then pour it over the butterfly pea flowers or tea bags. Steep for 5–7 minutes until the tea turns a deep blue. Strain and allow it to cool completely. 
  2.  Cook the tapioca pearls according to the package directions and coat them with the brown sugar syrup. 
  3.  Stir the sweetened condensed milk and optional honey or simple syrup into the cooled butterfly pea tea until fully combined. 
  4.  Fill two serving glasses with the brown sugar-coated tapioca pearls and ice cubes. 
  5.  Pour the milk into the glasses. 
  6.  Slowly pour the butterfly pea tea over the milk to create beautiful layered blue swirls. 
  7.  Add the fresh lemon juice just before serving to create the signature purple "galaxy" color-changing effect. 
  8.  Gently stir if desired to blend the colors. 
  9.  Garnish with lemon slices or edible butterfly pea flowers if desired. 
  10.  Serve immediately with a wide bubble tea straw and enjoy.
