Cabo Verdean Grogue Cake is a traditional island dessert made with Grogue, Cape Verde's famous sugarcane spirit, blended into a rich and moist cake. This classic recipe is perfect for celebrations, family gatherings, holidays, or enjoying with coffee or tea.

The cake features a tender crumb made from butter, eggs, flour, and sugar, while Grogue adds a distinctive aroma and subtle depth of flavor. A touch of vanilla and citrus zest enhances the cake with fresh, fragrant notes.

As it bakes, the cake develops a beautifully golden crust while remaining soft and moist inside. A light drizzle of Grogue syrup after baking adds extra richness and keeps the cake deliciously tender.

Every slice offers a balanced combination of sweetness, warmth, and traditional Cape Verdean flavor. This elegant dessert is easy to prepare and makes a wonderful centerpiece for festive occasions or special family meals.

Cooking Method

  1.  Preheat the oven to 180°C (350°F) and grease a cake pan.
  2.  In a bowl, whisk together the flour, baking powder, and salt.
  3.  In another bowl, beat the butter and sugar until light and fluffy.
  4.  Add the eggs one at a time, mixing well after each addition.
  5.  Stir in the vanilla extract, Grogue, and lemon zest.
  6.  Gradually add the dry ingredients, alternating with the milk, until a smooth batter forms.
  7.  Pour the batter into the prepared cake pan and smooth the top.
  8.  Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  9.  If making the syrup, gently heat the Grogue and sugar until the sugar dissolves.
  10.  Brush the warm cake with the syrup for extra moisture and flavor.
  11.  Allow the cake to cool before slicing and serving.
