Prepare Dough: Mix all-purpose flour with salt and a little oil. Add water gradually and knead into a stiff dough. Let it rest for 20–30 minutes.
Prepare Filling: Heat a little oil in a pan, add finely chopped broccoli and sauté for 3–4 minutes until slightly tender.
Add Cheese & Spices: Add grated cheese, salt, and spices. Mix well and cook briefly. Let the mixture cool completely.
Shape Samosas: Divide dough into small balls, roll into oval shapes, cut in half, form cones, and fill with broccoli mixture. Seal edges with water.
Frying: Heat oil on medium flame and deep fry until golden and crispy.
Serve: Serve hot with mayonnaise or mint chutney.
