Matcha Muffins

Cooking Method
- Preheat the oven – Preheat to 350°F (175°C) and line a muffin tin with paper liners.
- Mix dry ingredients – In a bowl, combine 1 1/2 cups all-purpose flour, 2 tbsp matcha powder, 1 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp salt.
- Mix wet ingredients – In another bowl, whisk together 1/2 cup sugar, 1/3 cup vegetable oil, 2 eggs, and 1 tsp vanilla extract.
- Combine wet and dry – Gradually fold dry ingredients into wet ingredients until just combined. Do not overmix.
- Add optional mix-ins – Fold in chocolate chips, white chocolate, or nuts if desired.
- Fill muffin cups – Spoon the batter into prepared muffin cups, filling about 3/4 full.
- Bake – Bake for 18–22 minutes or until a toothpick inserted comes out clean.
- Cool and serve – Let muffins cool for a few minutes in the pan, then transfer to a wire rack. Serve warm or at room temperature.
