Step 1: Make Caramel
In a pan, melt half of the sugar on low heat until it turns golden brown. Add water carefully and mix. Pour this caramel into a baking dish and spread evenly.
Step 2: Prepare Custard Mixture
In a bowl, whisk eggs and remaining sugar until smooth. Add milk, vanilla essence, cream, and cardamom powder. Mix gently (avoid creating bubbles).
Step 3: Strain Mixture
Strain the custard mixture to ensure a smooth texture.
Step 4: Pour into Dish
Pour the custard mixture over the set caramel in the baking dish.
Step 5: Steam or Bake
Place the dish in a water bath and bake at 180°C (350°F) for 30–35 minutes, or steam on low heat until set.
Step 6: Cool Completely
Let it cool at room temperature, then refrigerate for at least 2 hours.
Step 7: Demold & Serve
Run a knife along the edges, invert onto a plate, and serve chilled with caramel sauce on top.
