Eggplant and Tomato Gratin

 A rich and comforting vegan dish featuring layers of tender eggplant and juicy tomatoes baked with herbs and a light, crispy topping. This Mediterranean-inspired gratin is flavorful, wholesome, and perfect as a main course or side dish. 

Cooking Method

 

  1. Preheat oven to 180°C (350°F). 
  2.  Slice eggplant and tomatoes into thin rounds. 
  3.  Lightly salt eggplant slices and let them rest for 10 minutes, then pat dry. 
  4.  Heat olive oil in a pan and sauté garlic until fragrant. 
  5.  Layer eggplant and tomato slices in a baking dish. 
  6.  Sprinkle with herbs, salt, pepper, and sautéed garlic. 
  7.  Drizzle olive oil and add a light breadcrumb topping (optional). 
  8.  Bake for 35–40 minutes until tender and golden on top.
