Eggplant and Tomato Gratin
A rich and comforting vegan dish featuring layers of tender eggplant and juicy tomatoes baked with herbs and a light, crispy topping. This Mediterranean-inspired gratin is flavorful, wholesome, and perfect as a main course or side dish.
Cooking Method
- Preheat oven to 180°C (350°F).
- Slice eggplant and tomatoes into thin rounds.
- Lightly salt eggplant slices and let them rest for 10 minutes, then pat dry.
- Heat olive oil in a pan and sauté garlic until fragrant.
- Layer eggplant and tomato slices in a baking dish.
- Sprinkle with herbs, salt, pepper, and sautéed garlic.
- Drizzle olive oil and add a light breadcrumb topping (optional).
- Bake for 35–40 minutes until tender and golden on top.
