Cooking Method
Peel the green bananas and cut them into chunks.
Heat oil in a large pot and sauté the onion until soft.
Add garlic and tomatoes, then cook until the tomatoes break down.
Stir in curry powder if using.
Add the banana pieces and pour in the stock.
Cover and simmer until the bananas become soft and tender.
Gently mash some of the bananas to thicken the stew.
