Cooking Method

 

Cook rice according to package instructions; let it cool slightly. 

 Mix cooked rice with fresh lime juice, chopped cilantro, and a pinch of salt. 

 Heat oil in a pan and sauté garlic and onions until soft. 

 Add vegetables (like bell peppers, corn, beans) and cook until tender. 

 Season with cumin, chili powder, salt, and pepper. 

 Warm tortillas on a pan. 

 Fill tortillas with the veggie mixture and top with lime-cilantro rice. 

 Garnish with extra cilantro, avocado, or salsa and serve fresh.
