Cooking Method


  1.  Heat the olive oil in a large soup pot over medium heat. 
  2.  Add the onion and cook for 4–5 minutes until softened. 
  3.  Stir in the garlic and cook for about 1 minute until fragrant. 
  4.  Add the carrots, celery, and potatoes, then cook for another 5 minutes. 
  5.  Stir in the shredded cabbage and cook until it begins to soften. 
  6.  Add the diced tomatoes, tomato paste, vegetable broth, bay leaf, thyme, paprika, salt, and black pepper. 
  7.  Bring the soup to a boil, then reduce the heat to low. 
  8.  Simmer for 25–30 minutes, or until the vegetables are tender. 
  9.  Remove the bay leaf and adjust the seasoning to taste. 
  10.  Garnish with fresh parsley and serve hot.
